Cream of Mushroom Soup
You can use the everyday mushrooms you find in your grocery store or use them in combination with some of the more exotic varieties. Experiment and have fun - All will be good.
* 5 cups sliced fresh mushrooms
* 1 1/2 cups chicken broth
* 1/2 cup chopped onion
* 1/8 teaspoon dried thyme
* 3 tablespoons butter
* 3 tablespoons all-purpose flour
* 1/4 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1 cup half-and-half
* 1 tablespoon sherry
1. In a large heavy saucepan, cook mushrooms in the broth with onion and thyme until tender, about 10 to 15 minutes.
2. In blender or food processor, puree the mixture , leaving some chunks of vegetable in it. Set aside.
3. In the saucepan, melt the butter, whisk in the flour until smooth. Add the salt, pepper, half and half and vegetable puree. Stirring constantly, bring soup to a boil and cook until thickened. 500 g mushrooms ,1 lb mushrooms ,
90 g butter ,3 oz butter

Start by cleaning the mushrooms with a damp cloth and chop the caps and stems.
This part is rather tedious, it takes quite a while to chop the the veg, but it is worthwhile as it takes less time for the soup to cook.
Special Cooking Equipment
None required for this recipe.
Ingredients:
675g (1.5 lbs) white button mushrooms
2 tsps chopped garlic
1/2 tsp ground nutmeg
1/2 tsp crushed black peppercorns
3 tbsps flour
3 cups stock
3 cups water
100ml whipping cream
3 tbsps olive oil
Seasoning:
2 - 2.5 tsps salt
Method:
1. Wash mushrooms. Towel dry and slice.
2. Heat pot and add olive oil. Stir try garlic, followed by mushroom slices. Sprinkle nutmeg and crushed black peppercorns. Keep frying until mushroom slices turns soft.
3. Gradually add flour to the pot. Stir well. Slowly mix in water while stirring. Pour stock in and bring to the boil. Remove from heat.
4. Put the soup and ingredients into a blender. Puree over high speed. Put soup back into pot. Season with salt and remove from heat. Mix in whipping cream. Stir well and serve.

a can... lol sorry i dont really know any recipes for one except to get a lot of your favorite mushrooms, saute them, then add the broth and cream then reduce.
