A delicious split pea soup recipe, with ham.
INGREDIENTS:
2 cups dried split peas
6 cups cold water
1 meaty ham bone
1/4 pound Salt pork, cut in 1/2-inch pieces
10 cups water
1 cup diced onions
1 cup celery leaves and stalks, chopped
PREPARATION:
Soak the peas overnight in the 6 cups of cold water. Drain and put in a heavy soup kettle with the ham bone, salt pork and 10 cups of water. Cover and simmer 2 hours, then add the onions and celery.
Simmer about 1 hour longer, adding another cup of water if soup dries out too much. Remove ham from bone and dice. If desired, remove the salt pork. Put the soup through a strainer, blender or food processor. Blend with ham or add ham back into soup after blending. I like to blend or mash part of my pea soup and leave some texture. If the soup not thick enough, add 1/2 cup of light cream.

Here is my recipe for Pea Soup
2 quarts RO Water
1 Cup Green Split Peas
1 Cup Yellow Split Peas
1 Spanish Onion
1 Carrot
1 Potato (optional)
1 Stalk Celery
2 Tbs. Olive Oil
5 Bay Leaves
2 tsp. Sea Salt
2 quarts RO Water or Stock
2 Tbs. Tamari
Sea Salt to taste
Freshly ground Black Pepper to taste
Pick over peas removing those that are broken and any stones
Cut Onion, Potato, Carrot and Celery into small pieces. Saut茅 in Olive Oil until tender.
Add Lentils, Bay Leaf and Stock or RO Water. Add Sea Salt. Simmer until the lentils are very soft; about an hour, add Tamari. Add Black Pepper. Serve.

I just made this recipe for my family this week - it was delicious and was much easier to make than the stove top method. If you don't want to use a slow cooker, you can prepare the soup on the stove top by adding all the ingredients to a stockpot. Then bring the soup to a boil and then reduce the heat to a simmer for at least 2 hours. Keep the lid partially on the stockpot, sitrring occassionally.
Slow Cooker Split Pea Soup with Turkey Ham
(Prep Time: 10 minutes. Cooking Time: 4-10 hours)
1 (16 ounce) package of dried green split peas
3 cups diced turkey ham
1 1/2 cups sliced carrots (about 20 baby carrots, chopped)
1 large onion, diced
3 stalks of celery, diced
2 cloves garlic, minced
1 teaspoon salt (or less if desired)
1/4 teaspoon, freshly ground black pepper
6 cups chicken broth
Rinse the split peas, drain well and place in a slow cooker. Add remaining ingredients. Cover and cook on high for 4-6 hours or on low for 9-10 hours. The soup is done when the individual peas can no longer be identified and the soup is a smooth consistency
