Can anybody give a recipe for a filipino chicken soup called Lomi?

LOMI:





Ingredients:





100 gms lean pork, preferably menudo cut, sliced thinly (about 1 1/2 inches in length)


100 gms pork liver, sliced like the pork meat


300 gms chicken soup pack, or chicken stock


100 gms small shrimps (can be tagunton, or river shrimps), shelled, reserve the heads


100 gms fresh squid, cleaned and sliced


a few squidballs, orlian, chicken balls, fish balls (optional), quartered


a pack of thick miki noodles (about 1/4 kg)


2 carrots, julienned


100 gms snow peas, ends trimmed


a stalk of celery, sliced thinly


garlic and onion, minced


1 egg, beaten





METHOD:





Wash the chicken soup pack and saute in garlic and onion. Sprinkle salt or a dash of patis and white pepper. Turn sides. When the chicken has turned brown on all sides, add about eight cups of water, cover and bring to a boil. Alternatively, just put the chicken in a pan of water and bring to a boil, this way less cooking oil is used. After about 15 minutes, turn off fire and scoop out chicken to let cool. Flake chicken meat and discard skin and bones.





If using stock just bring to a boil in a pan of water. Put the shrimp heads in a mortar, pour 2 tablespoons of the soup stock, and pound. Pour back the soup, sieving the shrimp heads. Repeat for about two to three more times.





Heat a little cooking oil in a pan, and saute garlic and onions. Stir fry the pork, liver, squid, shrimps and balls for about three minutes. Transfer to the pan of soup stock and bring to a boil.


Wash the noodles then put into the boiling pan. Put in the flaked chicken.





Boil on medium to high heat for about three minutes, stirring occasionally. Season with salt and pepper, to taste.





Put in carrots, snow peas and celery. After about a minute, pour the egg, and stir in the soup until it sets. Serve immediately.





Serve with sliced kalamansi, fried garlic, sliced spring onion, and patis (fish sauce).Can anybody give a recipe for a filipino chicken soup called Lomi?

Ingredients:





* 1/2 kilo of white and round miki (NOODLES)


Garnishing:


* squid adobo (pusit)


* flaked fish meat (tinapa)


* pork sitsaron, coarsely pounded


* powdered pork sitsaron


* fried minced garlic


* cooked shrimps, shelled


* hard boiled eggs, sliced


* chopped springs onions





Palabok:





* 1/4 kilo pork, cut into small cubes\


* 1/4 kilo chicken giblets %26amp; liver


* 2-3 chicken wings, cut into small pieces


* 1/4 kilo fresh shrimps, shelled


* 2 large onions, quartered


* 3 cloves garlic crushed


* 1 pc. medium sized carrots, round thin slices


* 1/4 kilo cabbage, chopped 1 1/2'; squares


* 1/4 kilo cauliflower, break into flowerettes


* 2-3 stalks leeks, chopped 2'; long


* 1/4 kilo lomi noodles (flat)


* 1/2 cup pork (sliced into strips)


* 1/2 cup shrimps, shelled


* 1/4 cup chopped ham


* 1 large onion, chopped


* 3-4 cloves garlic, crushed


* 1 cup shredded cabbage


* 1 tbsp. chopped carrots


* 6-7 cups chicken or meat broth


* 2 tbsp. cooking oil


* 1 tbsp. cornstarch.dissolved in water


* 2 raw eggs


* 2 tbsp. patis


* salt to taste


* 1 tsp. vetsin





Instructions





Saute garlic and onion. When brown add pork, shrimps, and ham. Add patis; stir for 2 minutes. Add 1/2 cup water, cover and simmer until water is almost dry. Add broth. Cover and let boil for 10 minutes.





Drop in noodles, carrots, and shredded cabbage. Let boil for 3 minutes and thicken with dissolved cornstarch. Put off the heat.





Beat eggs and stir in. Do not boil. Serve at once.

hi there. of course! first cooke the chicken in enough water to cover it, and with one quarter cup of peppercorns, and two bay leaves. once it's almost done, add once cup soy soyce, once cup rice wine vinegar, once cup fish sauce. that's tha perfect filipino chicken soup.
