Anyone have the recipe for Chile's enchilada soup?

CHILI'S漏 Enchilada Soup








1 tablespoon vegetable oil


1 lb. of chicken breast fillets (approx. 3 fillets)


1/2 cup diced onion


1 clove garlic, pressed


4 cups chicken broth


1 cup masa harina (flour found in baking section of stores)


3 cups water


1 cup enchilada sauce


16 ounces Velveeta


1 teaspoon salt


1 teaspoon chili powder


1/2 teaspoon cumin





Garnish





shredded cheddar cheese


crumbled corn tortilla chips


pico de gallo











Add 1 tablespoon of oil to a large pot over medium heat. Add chicken breasts to pot and brown for 4-5 minutes per side. Set chicken aside.


Add onions and garlic to pot and saut茅 over medium heat for about 2 minutes, or until onions begin to become translucent. Add chicken broth.


Combine masa harina with 2 cups of water in a medium bowl and whisk until blended. Add masa mixture to pot with onions, garlic and broth.


Add remaining water, enchilada sauce, cheese and spices to pot and bring mixture to a boil.


Shred the chicken into small, bite-size pieces and add it to the pot. Reduce heat and simmer soup for 30-40 minutes or until thick.


Serve soup in cups or bowls, and garnish with shredded cheddar cheese, crumbled corn tortilla chips, and pico de gallo.





Pico de Gallo





2 medium tomatoes, diced


1/2 cup diced Spanish onion


2 teaspoons chopped fresh jalapeno pepper, seeded and de-ribbed


2 teaspoons finely minced fresh cilantro


Pinch of salt





I've never made this but it sounds good. This recipe is for people who prefer to make there own food instead of going to the restaurant and ordering off the menu!!!!!Anyone have the recipe for Chile's enchilada soup?

1/2 cup vegetable oil


1/4 cup chicken base


3 cups diced yellow onions


2 teaspoons ground cumin


2 teaspoons chili powder


2 teaspoons garlic powder


1/2 teaspoon cayenne pepper


1/2-2 cup masa harina(Note 鈥?Depending on how you like your soup, 1/2 c makes a thinner soup while 2 c makes a thicker so)


4 quarts water(divided)


2 cups crushed tomatoes


1/2 lb processed American cheese, cut in small cubes


3 lbs cubed cooked chicken





In large pot, place oil, chicken base, onion and spices. Saut茅 until onions are soft and clear, about 5 minutes. In another container, combine Masa Harina with 1 quart water. Stir until all lumps dissolve. Add to saut茅ed onions and bring to boil. Once mixture starts to bubble, continue cooking 2-3 minutes, stirring constantly. This will eliminate any raw taste from Masa Harina. Add remaining 3 quarts water to pot. Add tomatoes; let mixture return to boil stirring occasionally. Add cheese to soup. Cook stirring occasionally, until cheese melts. Add chicken; heat through.
