Does anyone have a good recipe for miso soup, but without the dried bonito (we're vegetarian)?

VEG MISO SOUP:





INGREDIENTS:


4 cups water


1/3 cup miso


3 green onions (scallions), chopped


1 tbsp shredded nori OR wakame (seaweed)


1/2 block firm silken tofu, cut into 1 inch cubes


dash soy sauce (optional)


1/2 tsp sesame oil (optional)





PREPARATION:





Bring water to a slow simmer and add seaweed. Allow to simmer at least 5-6 minutes. The longer you simmer the seaweed, the less of a salty fishy flavor it will have.





Reduce heat to very low and add the rest of the ingredients. Stir until miso is well dissolved. Its best not to boil the miso, as this will ruin some of it's healthy properties as well as change the flavor of the soup.

GARLIC MISO SOUP:





INGREDIENTS:


7 cups water


3 tbsp miso


1 tbsp garlic, minced


3/4 tsp garlic powder


1 tbsp soy sauce


1 tbsp sesame oil


1 block tofu, any kind, sliced into small cubes


3 scallions (green onions), sliced





PREPARATION:





Heat water and stir in miso, being careful that the water doesn't boil. It should be just below the boiling point.

Simmer 6 cups water and 1 sliced carrot 10 minutes. Soak 3 tablespoons of wakame (seaweed) for 5 minutes and add to soup, along with 2 sliced scallions (green onions) and 1/3 lb. of chopped tofu. Simmer 1-2 minutes and remove from heat. In some soup stock, dilute 1/4 cup of miso and add to soup. Vegetable Miso Soup Recipe. This is a quick and easy miso soup filled with plenty of vegetables. It's still a very light soup, so it makes a good starter or a warming afternoon snack. If you don't have all the veggies on hand, try this basic vegetarian miso soup recipe or this quick and easy garlic miso soup.


INGREDIENTS:


2 cups tomatoes, diced


1/4 cup sesame oil


1 leek, sliced


1 1/2 cups shiitake mushrooms, sliced


6 cups vegetable broth


2 tbsp diced wakame or other seaweed


1 package silken (soft) tofu, cubed


1 tbsp soy sauce


3 tbsp miso


2 scallions (green onions), sliced


PREPARATION:


In a large pot, sautee the tomatoes, leek and mushroom for 1-3 minutes.


Add vegetable broth, seaweed and tofu and bring to a slow simmer. Add the tofu, soy sauce, miso and scallions and reduce heat to low.





Stir well to dissolve and mix the miso. Allow to cook for at least 8 more minutes.
.Heat water, add seaweed then stir i n miso to taste. Add shavings of carrot, green onion, or bits of tofu.
