Has anyone a recipe for a vegetarian onion soup please?

Those I have found on the net require beef or some sort of meat stock and require 15 hours of cooking time! Has anyone out there a vegetarian onion soup recipe which a busy veggie can make please?Has anyone a recipe for a vegetarian onion soup please?
Ingredients





3 lb beef shank


1 陆 lbs bacon


1 large chicken breast


1 lamb鈥檚 liver


1/3 cup diced carrots


1/4 tsp celery salt


1/8 tsp pepper


3 qt cold water


1/3 cup diced turnips


1 bay leaf


1 tsp salt


2 tbsp cooking fat








Directions





Wipe beef shank. Cut beef, bacon, lamb鈥檚 liver and chicken into small pieces. Crush bone. Brown all meat in hot cooking fat. Combine meat, bone, bay leaf, celery salt, water, salt, and pepper. Cover. Simmer slowly 4-5 hours. Skim as necessary. Brown vegetables in hot cooking fat. Add to meat broth. Simmer until vegetables are tender. Toss in an onion and serve.

You can easily substitute meat stock for vegetable or mushroom stock. If you need a more hearty taste, try adding a spoon or so of marmite.





Slowly fry off some onion slices and thyme or sage in olive oil, throw in some stock and a bit of marmite, cook until it tastes good.


The onions taste wicked if fried slowly over a low heat - they caramalise and develop an amazing taste.
This is a doddle. Slice your onions into very thin rings. Fry very gently in olive oil until transparent. Add crumbled veg stock cubes and hot water and allow to simmer for anything from 20 minutes to an hour, depending on when you want to eat it.


This is actually a variation on French onion soup.


Per person: one medium-small onion or half a big one. One stock cube. half to threequarter pint hot water.


Taste-test to see if it needs salt, pepper or more stock cubes before serving. You can also add a dash of soy sauce, or anchovy essence, or marmite
I always have a simple recipe for vegetable soup and it works everytime.


Finely chop i leek, 1 carrot, 1 parsnip, soften in a little oil, add a bouquet garni and a bay leaf, 2 pints of veg stock, (stock cube), bring to the boil add peas and a good pinch of white pepper, then simmer for 30mins. Take off the heat and blitz til smooth, I like mine half and half so it still got chunks in it.





You can use any vegetables. Its good for using up the left overs. also nice with added pasta or rice.






Make your own vegetable stock!!


Start by washing then chopping the following


Carrots


Onions


Potatoes


Green onions


Celery

Next put some olive oil in a large stock pot sweat the veggies!!


Next step is water! Fill with water not a lot, unless you have millions of veggie bits in the pot haha


Season to your liking and simmer for like 30 to 45 minutes.

Pacific Foods makes a vegan mushroom stock, which should give a hearty flavoring. There are also vegetarian ';beef'; style bouillon cubes. If you do have the time, making your stock is never a bad idea, but you did say you're a busy veggie (so am I).

The fact that French onion soup is based on a beef consomme is typical of the French attitude to vegetarians.





Just caramelise (ie. slightly burn) the onions and use vegetable stock.





PS. Anchovy essence isn't vegetarian, is it?
