Wash Day Dinner Soup (grandmother's recipe)

i serve mine with homemade cornbread and butter.
Cream of leek soup.

slice the leeks into thick slices, a white onion, and a potato. cook the onion, add the leeks when the onion is almost cooked, when the leeks have shrinked add the potato thinly sliced or diced and add enough stock to cover it. add salt and pepper to taste.

Old-Fashioned Cream-of-Tomato Soup

Makes 4 to 6 servings

In season, there's nothing like a creamy tomato soup made from fresh

tomatoes! In season, also, if you have enough tomatoes to make a pot of

soup, country cooks often have enough tomatoes to can for wintertime

enjoyment. One of my favorite ways to use home-canned tomatoes is in this

simple, creamy soup. My mother cans them for me.

2 tablespoons butter

1 small onion, finely chopped

1/4 cup all-purpose flour

1 cup milk

1 quart peeled, chopped, fresh tomatoes, or 1 quart home-canned tomatoes, or

1 (28-ounce) can Italian-style tomatoes

1/2 teaspoon dried leaf thyme

1/2 teaspoon dried leaf basil

Salt and freshly ground black pepper to taste

1/2 pint whipping cream (1 cup)

Celery leaf

VARIATION: Substitute yellow tomatoes for red tomatoes

In a large saucepan, heat butter. Add onion. Saut茅 2 minutes. Add flour and

cook, stirring, 2 minutes. Whisk in milk. Cook, stirring, until thickened.

Add tomatoes with juice. Simmer 10 minutes. Turn mixture into a blender or

food processor fitted with the steel blade. Process until fairly smooth.

Return soup to pan. Add thyme, basil, salt and pepper. Stir in cream. Heat

to serving temperature. Serve hot garnished with sour cream.

Bean Soup

about 6 to 8 serving.

1 16 ounce package Navy or Great Northern Beans

7 cups total water and broth...use 3 cans broth

then made up the difference with water to make 7 cups

1 ham bone

2 cups diced ham

1 small onion, diced

2 cloves garlic, minced

1 pinch black pepper

1 bay leaf, optional

1/2 cup carrots, sliced (I used about 3/4 to 1 cup)

1/2 cup celery, sliced

2 small potatoes, diced

Rinse and soak beans over night in covered pot.

Add all ingredients to crockpot and cook for 5 hours (or until done) on

high, or all day on low until beans are tender.

You can cook these on the stove as well until beans are tender.

Taco Soup

2 pounds ground beef

2 cups diced onions

2 cans pinto beans

1 can pink kidney beans

1 can whole kernel corn, drained

3 cans of rotel

1 can sliced black olives

1 can chicken stock (use to thin out if too thick for you instead of water)

1 (1 1/4-ounce) package taco seasoning mix

1 (1-ounce) package ranch salad dressing mix

Corn chips, for serving

Sour cream, for garnish

Grated cheese, for garnish

Chopped green onions, for garnish

Pickled jalapenos, for garnish

Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, black olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. Use chicken stock to thin out if soup is too thick for you.To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.

Spaghetti Soup is really excellent too, although I've never made it, but I found this recipe.

http://soup.betterrecipes.com/spaghettis鈥?/a>
Simple soup...depends on your taste.

Creamy...Potatoes, just enough water to cover potatoes, bay leaves, salt and pepper. Boil til potatoes are cooked. Add half and half.

Vegetable - Mix onions, celery, carrots, tomatoes, and any other veggie you like. Add seasonings. Boil til veggies are done and it tastes good.
A simple soup would be some cooked pasta and lightly sauteed vegetables (carrot %26amp; celery) in chicken broth/stock. Beautiful in its simplicity.
