boil potatoes, and 1 stalk chopped celery for every 4 potatoes, and onion chopped, use as little water as possible, and if you have it a T. of bacon grease (or 2 slices raw bacon)

when potatoes are done, and water is almost boiled out....remove the bacon, smash the potatoes, add butter and milk bring back to almost but not a boil

salt and pepper to taste

(I got this recipe in the Wisconsin Dells years ago, the bacon grease and celery are the secrets)
I like to cube up 3 large potatoes and put them in a big pot with some vegetable broth- it adds more flavor. Season it with salt, pepper, garlic and thyme, simmer the potatoes until tender. Then I stir in about a cup of cubed ham and a cup of heavy cream or half and half. I thicken it up with another half cup of cream mixed with about a third cup of cornstarch, stir those 2 together really well before you stir it into the hot soup.

Then I top it off with some bacon, cheddar cheese and sour cream. Mmm... yummy.

The indredients that make this potato spoup really good are the veg broth and the cream. You can use water and milk, but the soup won't be quite as good.

Oh- I also like to sprinkle green onions or chives on top.

It's really simple to make.
i use hard rock cafes and my family loves it.The only thing i do different is add ...hormel maple syrup bacon instead of regular bacon it adds a sweetness to it.

My family can tell when I dont put it in the soup!

have a good day and enjoy!!
