Any good vegetarian recipes that use leeks ? (except leek and potatoe soup)?

i love leeks but running out of ideas with what to do with them !! any recipes appreciated.... thank you Any good vegetarian recipes that use leeks ? (except leek and potatoe soup)?
Shred a leek and a large carrot. Fry in hot sesame oil. Add a little crushed fresh ginger.Add a packet of cooked noodles of your choice.Stir fry until warmed through.





Then add soy sauce, rice wine vinegar, a little more sesame oil, to season.





Finish with some crushed, toasted peanuts, a lime or lemon wedge and a few chilli flakes. Very easy and very yummy - when the shredded leeks hit the hot sesame oil they reach a new dimension of toasty yumminess!





You could also add crushed garlic and fresh chillies at the first frying stage, if you want a little more flavour and zing. Just be sure not to burn the garlic, and be careful of getting chilli in your eyes (as I ALWAYS do.) Also, a few cubes of tofu at the first stage turn this into more of a meal rather than a snack.

I would make a lovely creamy leek risotto - here's a good recipe.





Ingredients


25g butter


1 tbsp olive oil


4 spring onions , trimmed and finely chopped


2 garlic cloves , sliced


150g arborio rice


glass white wine


750ml vegetable or chicken stock


25g parmesan , finely grated





Method


Bring the stock to a simmer. Heat a large wide pan and add half the butter and the olive oil. Add the spring onions, leeks and garlic and cook for 5 minutes until softened. Add the rice and stir to coat then tip in the wine and bubble until reduced. Add the stock a little at a time, stirring until the rice is tender with a little bite and oozy.


Stir in the parmesan and the rest of butter and season.





Enjoy !



Leeks Gratin -





Ingredients


4 medium leeks


60 g cheese, grated


White Sauce:


300 ml milk


30 g butter


30 g plain flour


1 tsp mustard


1 clove garlic, crushed


1 pinch nutmeg, ground





Method


Cut leeks into small pieces and steam or boil leeks until tender, 7-9 minutes.





Put all ingredients for the white sauce in a pan and heat gently, stirring occasionally until sauce thickens for approximately 10 minutes. Liquidize in a blender.





Place in an oven proof dish and pour over white sauce to cover the leeks.





Bake in an oven for approximately 20-30 minutes. Sprinkle with cheese during the last 5 minutes of baking.
My vegetarian cookbook has two recipes which use leeks as a main ingredient:





Leeks baked with blue cheese:





750g baby leeks, trimmed and halved


2 tblsp hazelnut oil (although I'm sure you could use olive oil)


4 tblsp vegetable stock


15g butter


125g dolcelatte cheese, crumbled


2 tblsp chopped hazelnuts





Preheat oven to 200 C/400 F/Gas Mark 6.


In a bowl, toss the leeks with the oil and place in a large roasting tin with the stock. bake in the oven for 15 minutes.


Dot leeks with butter, cheese and nuts, put back in oven and cook for a further 15-20 minutes until leeks are tender and cheese has melted.





Balsamic braised leeks and peppers:





1 1/2 tblsp olive oil


2 leeks cut into 1 cm pieces


1 orange and one red pepper, deseeded and cut into 1 cm chunks


3 tblsp balsamic vinegar


1 handful chopped parsley





Heat oil in a saucepan (it definitely says saucepan, not frying pan), cook leeks and peppers very gently, covered, for about 10 minutes.


Add vinegar and cook for a further 10 mintes without a lid. The vegetablkes should be brown in the vinegar and all the liquid should have evaporated.


Stir in parsley.

CREAMY LEEK %26amp; MUSHROOM PASTA;





60g/2oz penne pasta


110g/4oz leeks sliced and rinsed


a little oil


seasoning


110g/4oz mushrooms chopped roughly


1 garlic clove crushed


1 tsp thyme freshly chopped


40g/1 and a half oz low fat soft cheese





1. Tip the penne into a pan of boiling water and cook for 10-12 minutes until tender.


2. Meanwhile, pour the oil into a non stick saucepan and add the leeks, season and 2 tablespoon water, cover the pan and cook for 3 minutes.


3. Add the mushrooms, garlic, and thyme to the leeks, re-cover the pan and cook for 5 minutes. Stir the low fat soft cheese into the juices to make a creamy sauce.


4. Drain the pasta and toss together with the sauce.


Serve in a warmed bowl.





LEEK %26amp; BUTTER BEAN CRUMBLE;





a little oil


250g/9oz leeks trimmed, rinsed and sliced


seasoning


150ml/5 fl oz veg stock


1 medium slice bread white or wholemeal


40g/1 and a half oz mature cheese grated


1 x 410g can butter beans rinsed and drained


2 tsps grain mustard





1. Preheat the oven to gas mark 5/190C/fan oven 170C/375F


2. Add the oil to a non stick cooking pan, add the leeks and seasoning and toss to coat. Add 3 tablespoons of the stock, cover the pan and cook for 4 minutes until tender


3. In the meantime, roughly tear up the bread and whiz to crumbs in a food processor, or use a hand blender. Mix with grated cheese


4. Add the drained butter beans, mustard and remaining stock to the leeks, season and stir to mix then tip into a baking dish. Cover with the cheesy crumbs and mist with a little oil. Bake for 15 minutes until crisp, golden and bubbling









You could make mock 'chicken' soup, that is, if you eat Quorn.


Or, you could just use tofu.





All you need are leeks, carrots, rice (or pasta), corn and some Quorn (or tofu). Use vegetable stock cubes to make a broth, cook your veggies and ta-da, you have soup.





It's actually really tasty, even though it's dead simple. You can add as many veggies as you want. Oh and it's extra nice if you have some fresh, crusty bread with it.
Try a leek, rocket and basil quiche - delicious.


Just fry some chopped leeks, 2 cloves of crushed garlic until tender. Add rocket leaves and a few shredded basil leaves, cook a further 2 mins. Leave to cool. Place into a pre-cooked quiche puff pastry pastry shell. Add the quiche mixture on top (4 eggs, 1 cup milk, 1 cup cream, plus salt %26amp; pepper, all whisked together). Sprinkle with a little grated cheese. Bake at 180 degrees C for 50 minutes.
Try this delicious recipe! Peel 4 potatoes and boil them until soft, in a separate pan- fry some leeks with a bit of butter and some balsamic vinegar, once they have browned off, add leeks to the potato, mash together, then put some vine tomatoes on top and shave some cheddar cheese, shove until the Grill for 2 Min's, there you have it, bloody gorgeous!! ;)
well there is a broth we have in wales which is not vegetarian called cawl with just as much different veg as possible in there with lamb beef pork or even chicken. however there is no reason why u can't just make this with vegetables including leek with a bread roll and a dollope of goats cheese yummy.


All u need to do is boil the veg in water ,add salt and pepper even better just some oxo cubes add a generous helping of mustard ,brown sauce and soya sauce in with this and boil till the veg is nice and soft.This tho would not be suitable for a person on a low salt diet i don't think unless it was in small portions. Try it u might like it. : ))
I love leeks in soup. For some reason they just seem right in broth. But I agree that potato soup is old, and have several other recipes for soup that take a leek.





My favorite is called ';Your In Soup.';





You make a nice savory vegetable broth, with a little cumin and cardomom to give it a bit of an east indian flavor.





Just before serving, you take a leek in it. Your guests will be so surprised.
Try a vegetarian version of Welsh Flan





Short crust pastry base, cover with a layer of cooked and thickened soya/quorn mince, then put on a layer of cooked finely sliced leeks and top with a layer of cheese sauce. Bake in oven until pastry is cooked
I put sliced leeks into macaroni cheese





make a basic cheese sauce


slice leeks and mix into almost cooked pasta


place in an ovenproof dish


cover with cheese sauce


sprinkle grated cheddar and parmesan on top


bake in a hot oven til the cheese bubbles and browns
rachel rae uses the hell out of leeks. you may want to check her website, she does alot of vegetarian meals too.





I hate rachel rae, but I'm poor and from kentucky so I don't have cable.
Leek and Mushroom bake





Leeks/Button Mushroom - tin of Mushroom Soup and topped with breakcrumbs and cheese- bake till golden and its delish
Leeks are a form of onion.





Just use 'em anytime you'd use an onion. There's no ';special'; recipes that call for only onions that can't be replaced with sweet, delicious leeks!
Haha i was halfway through reading it and though LEEK AND POTATO SOUP! oh...

Chop the leeks up with some onions, tomatoes, whatever you like really and put them in an omlette :]

BEEF, HAM AND LEEK SOUP





Ingredients:





1 pound lean stewing beef, cut in 1/2-inch pieces


1 beef soup bone


1 joint ham


3 cups water


2 cups beef broth


2 cans (14.5 ounces each) tomatoes


2 cups diced potatoes


2 cups diced carrots


1 cup diced celery


1 cup diced turnip


1/2 cup chopped onion


1/4 cup pearl barley


4 whole cloves


1 bay leaf


1 teaspoon sugar


a leek or two


salt and pepper, to taste





Preparation:





Place all ingredients in a deep soup pot; cover. Bring to a boil. Reduce heat; cover and simmer for 1 1/2 to 2 hours, or until meat is tender. Remove bone. Chill overnight. Skim off fat, reheat, and serve. Chuck a couple of leeks in to shut those limpwristed vegetarian pansies up. Makes about 4 quarts of beef, ham and leek soup.



Just make leek soup.
