This website is a basic guide to making YookGaeJang.


But if you want to make it the real old-fashioned Korean way:





Ingredients


For Meat:


0.66 lbs. (300g) Beef Brisket


2 TBSP Crushed Red Pepper


1 TBSP Minced garlic


2 TSP Sesame Seed Oil


Other:


0.22 lbs. (100g) Bean sprouts


0.22 lbs. (100g) Dried fern-Bracken (go sa ree)


4 roots Scallions (LARGE)


1 TBSP Crushed Red Pepper


Salt To taste





Stock %26amp; Meat Prep:


1) Put beef brisket in cold water to allow for the blood to come out. (Usually about 45-60 minutes)


2) Put beef brisket in large pot, fill with approximately 8 cups of COLD water and boil for about 3 hours. (Cold water is used to get the full flavor)


3) Pull out meat and cool. Then pull apart into thin pieces and mix the ingredients from ';meat'; with the pulled pieces. Keep the stock, since it will be used later.)


4) Allow for the meat and ingredients to marinade (at least 30 minutes at room temperature)





Bean Sprouts, Dried Fern, Large Scallions Prep:


1) Bean Sprouts: Clean by washing in cold water, then remove the pointy part of the stems (tail) and the filmy layers around the head (some have them some don't).


2) Dried Fern: Soak in warm water for about 30 minutes, then boil for another 30 minutes until tender. Rinse in cold water and squeeze water out. Cut off the ends (approximately 2.5 inches).


3) Clean with cold water, and cut into 3 inch strips in length, then cut in half.





Putting it together:


1) Bring the beef stock to a boil, then add the marinaded meat. (Boil at medium-medium high heat)


2) Once boiling, add the dried fern and bean sprouts.


3) When bean sprouts and dried fern are almost fully cooked add the large scallions.


4) Bring to a boil, and add salt to taste.


For a spicier version you can add more crushed red pepper.


5) Boil at medium heat for at least another 20-30 minutes. The longer the better.





This takes almost an entire day to make, just be patient. You can contact me if you have any more questions.





EDIT: Most of the ingredients can be found at an Asian grocery store. If you have a larger one close by, it'll be a lot cheaper and easier to find! ^-^
