Cheesy Onion Soup





1 package French Bread Pizza, white


4 tablespoons butter or margarine


6 cups sliced onions


2 tablespoons all-purpose flour


6 cups beef broth


2 tablespoons white distilled vinegar


1/2 teaspoon salt


1/2 teaspoon ground black pepper


Melt butter in a heavy stockpot; saut茅 onions over medium-low heat until light brown, stirring occasionally, 8 to 10 minutes. Sprinkle flour over onions. Stir in beef broth, vinegar, salt, and pepper. Bring to a boil, reduce the heat, and simmer uncovered for 10 minutes.


Prepare the French Bread White Pizza according to package directions. Cut each piece into thirds.


Ladle soup into serving bowls, top with pizza bread and serve hot.


Makes 6 servings.

INGREDIENTS


1 cup butter


6 onions, thinly sliced


1 tablespoon dried thyme


ground black pepper to taste


4 tablespoons all-purpose flour


8 cups water


2 cups dry white wine


1/2 cup soy sauce


4 tablespoons honey


1 1/2 cups shredded Swiss cheese














DIRECTIONS


Melt butter in large saucepan over medium heat. Add onions and thyme, season with pepper. Cover and cook until onions are translucent, stirring occasionally, about 15 minutes. Cook until they are brown and caramelized, another 10 minutes.


Add flour to onions and stir until browned, scraping bottom of pan for about 5 minutes. Mix in water, wine, soy sauce, and honey. Bring to boil. Reduce heat; cover and simmer until soup is slightly thickened, about 1 1/2 hours. Add shredded Swiss cheese, stir till melted.
