Recipe for Ministromy Soup?

Does anyone have one or a link or something.Recipe for Ministromy Soup?
4 slices bacon


1 cup chopped onion


4 cloves garlic, minced


1/3 pound ground beef


1 cup minced celery


1 cup cubed carrots


2 cups tomato puree


2 (14.5 ounce) cans stewed tomatoes


1 (14 ounce) can beef broth


1 (10.5 ounce) can condensed French onion soup


5 cups water


1/4 cup red wine


1 teaspoon dried oregano


1 teaspoon dried basil


salt and pepper to taste


1 cup chopped zucchini


2 cups spinach, rinsed and sliced


1 cup uncooked spinach pasta


1 (15 ounce) can garbanzo beans, drained


1/4 cup chopped parsley














DIRECTIONS


In a large stock pot, cook bacon and drain off fat. Add onion, garlic, and beef. When onions are translucent, add celery, carrot, pureed tomatoes, whole tomatoes, broth, condensed soup, water, wine, oregano, basil, salt and pepper. Cook for 15 minutes.


Stir in zucchini, spinach, pasta, garbanzo beans and parsley. Cook for 15 minutes and serve with fresh Parmesan cheeseRecipe for Ministromy Soup?

MINESTRONE (ITALIAN VEGETABLE SOUP)





2 tbsp. olive oil


1-2 cloves garlic, chopped


1 lg. diced onion


2 c. diced potatoes


1 c. diced celery


1 c. sliced zucchini


1 c. green beans


2 c. shredded cabbage


4 c. beef or chicken broth


2 c. peeled tomatoes


1 can cannellini or northern beans


1/2 lb. sm. shell pasta


Chopped parsley %26amp; basil


Fresh ground pepper





Saute garlic and onion. Add potatoes, celery, carrots and stir a few minutes. Add broth and 2 cups of water, bring to boil then add peeled tomatoes. Cook for about 10 minutes, then add zucchini, green beans and cabbage, bring to boil. Add parsley, basil and beans, let simmer until vegetables are almost ready. Bring to boil, add pepper and salt to taste. Add dried shell pasta. Cook 8 to 10 minutes. Let stand 5 minutes before serving. Sprinkle grated cheese on each serving. Makes 6 servings.

Minestrone Soup





Ingredients:





1 lb hamburger


1 c chopped onion


1 t minced garlic


1/4 tsp Pepper


1 can beef broth


2 cans water


3 tsp beef soup base (heaping)


1 1/2 tsp Italian seasoning OR


1/2 tsp EACH fresh oregano, basil, sage, rosemary, and thyme.


16 oz Can whole tomatoes, broken into bite sized pieces


8 oz can kidney beans, un-drained


1 1/2 c sliced carrots


1 c frozen green beans or 2 zucchini, chopped


1 c frozen lima beans or corn


1 can of garbanzo beans (chick peas)





Brown hamburger, onion, garlic and pepper. Add rest of ingredients except macaroni. Cook for at least 20 min add macaroni and cook until macaroni is done.

Easy and good. In a large pot add tomato juice and water to make a veggie broth. Add chopped onion, zucchini, carrots, celery. Add canned kidney beans- rinsed. Add a bay leaf or two, celery salt (optional),and pepper. Precook your favorite pasta in another pot. Rinse and add to soup pot. Discard bay leaves before eating. Good with fresh grated parm!
