This is what's called fish broth in Trinidad and the West Indies ... in Jamaica they call it fish tea ...

2 snapper fillets - seasoned with salt and black pepper

4 green bananas peeled, cut in to 4 pieces each and soaked in water

8 okra - tips trimmed

1 onion diced

2 stalks of celery - chopped (if there are leaves on it, mince those finely as well ..)

1 large or 2 medium carrots - peeled and sliced

2 cloves of minced garlic

2 sprig of fresh thyme

1 bay leaf

1/2 lb of thin macaroni tubes (like penne rigate)

3 tbls of salted butter

Pan fry the fillets in vegetable oil until seared, but not fully cooked. In a large soup pot put all of your ingredients except the macaroni but including the seared fish with about 6 quarts of water and let simmer until the green bananas are fully cooked. (about 45 minutes) Add the macaroni and boil until tender. Season with salt and black pepper. Serve with wedges of lime, chopped cilantro and hot sauce.
