Any one know a good soup recipe that include butternut squash, parsnip and potato?

Butternut Squash Soup





Prep time 15 min


Cook time 45 min


Serve time 1 hour better if aged overnight





Ingredients


3 Tablespoons butter


1 small onion chopped


2 cloves garlic chopped


陆 tsp red pepper flakes


1 apple cored, peeled, %26amp; cubed


1 stalk celery chopped


1 medium carrot chopped


2 medium potatoes cubed


1 medium butternut squash, peeled seeded %26amp; cubed


32 Oz chicken stock


salt %26amp; pepper to taste


optional 1 block cream cheese





DIRECTIONS


Melt the butter in a large pot, %26amp; cook the onion, celery, carrot, potatoes and squash 5 minutes or until lightly browned. Add enough chicken stock to cover %26amp; simmer until vegetables are tender.





Using a slotted spoon, transfer the vegetables to a blender %26amp; blend till smooth. Recombine liquid %26amp; vegetables. Add stock until the desired thickness is achieved. Add the optional cream cheese if you want a richer
